Mexican sides- Guacamole and Tomato Salsa

This is a post to accompany Vegan Fajitas, and both are very simple yet very delicious!

Guacamole Recipe


1 large tomato (ripe)

3 Avocados, very ripe

Juice of 1 lime

Corriander to taste

1 small red onion

1 chilli pepper

1. Pulverise the tomato to a pulp, or failing this just chop lots and lots until you can’t chop anymore, and add to a large mixing bowl

2. Scoop the avocado flesh into the bowl with the tomato pulp.

3. Finely chop the onion and chilli pepper, and add to the bowl.

4. I’d use about a handful of corriander leaves, and rip them roughly or chop to make them a little smaller. Add to mixing bowl.

5. Squeeze the lime into the bowl, and mash roughly (it can be as chunky as you like it, so mash it for longer if you want more of a paste, or for less time if you want chunky pieces of avacado).

6. Enjoy in a tortilla wrap with chosen fillings.


Tomato Salsa Recipe


2-3 tomatoes

1/2 red onion

1Β jalapeΓ±o chilli pepper

Juice of 1 lime

1/2 cup chopped corriander

salt and pepper to taste

optional: oregano and/or cumin to taste

1. Chop tomatoes roughly into small pieces.

2. Add other ingredients to a large mixing bowl, everything finely chopped.

3. Add more chilli if too cool, or more tomatoes if too hot.

4. Enjoy in a tortilla wrap with chosen fillings.
