Basic Pasta Salad (durum wheat pasta for Vegans)


150g Pasta (or as much as you want)

100g Cherry tomatoes

2 Spring onions

1 Grated carrot

handful of grated cucumber

handful chopped parsley

splash olive oil

splash of apple cider vinegar

Optional: Olives


1. Cook the pasta, then wash with cold water to remove the starch, and leave to cool.

2. Chop everything that needs chopping, wash everything else

3. Add into a bowl with the cool pasta

4. Add dressing of apple cider vinegar and olive oil

5. Enjoy with Puy Lentil Salad and cous cous, also good with toasted pitta sticks and humous
