This ‘East Meets West Curried Rice’ is a recipe me and my mum saw by Mouthwatering Vegan.
It is a mix of mushrooms, sweetcorn, apricots and curry, and the flavours are to die for! Any meat-lover will LOVE this meal, and if you are looking for a meal to convince a meat eater of veganism, or just to fool a meat eater into not missing meat (as a point-prover, I’ve found this is sometimes needed!), then this is the dish for you.
The recipe serves 2, so we jumpled the recipe up a bit, and made it feed 7, so my mums might look a little different to the website, but my god it was amazing! And a very easy recipe too, I can’t wait to have it again!
We served this with a green leafy salad, white rice and a pan-fried chapati (in a dry pan, medium heat, leave for 30 sec one side, flip once, then leave for 30 secs or until warm through, and serve).
