Looking for a refreshing, healthy AND raw lunch which will have you feeling energised and keep you going for the rest of day? This is a raw vegan recipe by Real Raw , and this post is following on from my previous post with a recipe for Cashew Sour Cream (also by Real Raw). It is delicious and very filling, and also perfect for lunch whether you’re a vegan, meat eater, veggie or anything.
I have served this soup with the cashew cream and chopped chives, but you can use regular vegan cream if you prefer.
¾ of a medium cucumber
1 stalk celery
Juice of 1 lime
Small handful of fresh coriander
2 teaspoons cumin
1 teaspoon ground coriander
½ teaspoon salt
1 teaspoon tamari
1 cup water (if wanting warm soup use hot water)
Sour cream and chopped chives to garnish
As with the cashew cream, Real Raw makes it so easy. You just add all the ingredients into the blender except the cashew cream and chives.
Blend all these ingredients into a soup.
…then serve with a dollop of cream and some chopped chives!
If you’re using a hand blender like me, be prepared to have a cashew-coated kitchen by the end of this. My blender doesn’t have a lid obviously, so I was covered by the end of this! But it was such a fun recipe to make, and I still love blending things I find it so exciting and I feel all powerful with this big tool in my hand!
One great thing about making this was it is cold, so I could spend as long as I wanted taking photos, and once made I didn’t have to eat it straight away. I had time to clean the WHOLE kitchen, and leave it cashew free, before sitting down to enjoy my lunch. Normally when I make something hot I have to go eat it straight away, and inevitably I leave it until I make dinner at night to actually clean the kitchen properly.
Raw food = Clean Kitchen …. noted!
