Fennel & Thyme

Welcome fall with these warm, gooey muffins. Full of juicy apple and spicy cinnamon, these will warm your inner soul. They’re perfect for breakfast, and fat-free so indulge!

Dry ingredients:

1 1/4 cups of all-purpose flour

1 cup of shredded coconut

2/3 of a cup of soft, brown sugar

1 tsp of baking powder

2 tsp of cinnamon

1 tsp of ground ginger

1 tsp of nutmeg

1/4 of a tsp of ground clove

1/2 an apple diced small and 1/2 an apple sliced thinly

Wet ingredients:

2 tbsp of chia seeds in 2 tbsp of water

1 cup of purΓ©edΒ pumpkin

1 cup of coconut milk


1 tbsp of honey or other liquid sweetener

1 tsp of cinnamon

1 tsp of lemon juice

Pre-heat the oven to 350 degrees F. Yields approximately 9 muffins.
