Today I fancied pesto, but not carby pasta… And I didn’t know whether basilled quinoa would be wrong. Google quickly sent me to this recipe by Table for Two (here), so I decided it was going to happen! HOW HAS THIS DELICIOUS IDEA NOT OCCURRED TO ME BEFORE!
I had the quinoa with cute little roasted red peppers, spinach and a homemade basil pesto (1/2 cup of soaked cashews, 1/2 cup olive oil, 2 cups basil, 1 clove garlic).
