I had a mis-match of salad and all sorts… And it was a huge winner so here goes…
Sautéed veg (mushroom/pepper/onion), tomato/vegan mozzarella/basil (with balsamic vinegar) and a rocket and caper salad with lemon juice and olive oil.
The tomato slices with vegan mozzarella and basil were the highlight. This is a summer almost tradition in my house (with real mozzarella) so I am delighted to have found a vegan substitute! It doesn’t taste like the real deal but when covered in balsamic who’s going to care eh? Still very tasty.
