30 minute pizza dough (!!!!)

Yep, you heard it right, THIRTY minutes for a dough… I found this beautiful recipe (click here) on allrecipes, and expected it to probably not be as good as usual pizza dough that takes hours in rising time. But it was almighty.

Highly recommend.

I then used an organic passata for the tomato base.

Then added crushed garlic, sliced tomato, sliced mushrooms, spring onion, olives and sliced courgette (why hold back?!).

And after 25 mins in the oven, I drizzled with olive oil and added spinach that wilted on top.

 1. Spinach and spring onion salad with avocado and balsamic glaze

2. Four bean salad (bought a big tub from Aldi for Β£1.49- lazy person’s bargain)

3. Chilli/garlic olives (Aldi again, Β£1.49)

5. A strong black coffee (I added sugar-guilty!)

Blueberry and Lemon Cupcakes

I made cakes for my cousin’s baby’s christening! Woah that was a mouthful.

They were blueberry and lemon cupcakes, and they were so much fun to make and were NOM. I made a lemon buttercream for on top, and madeΒ soo much buttercream that I froze a whole box of it! Google told me that you can freeze it up to 3 months… so I’m going with that, and I will thaw it the day before I use it. yay. I even made candied orange peel using the lemon peel, you’d think I had loads of spare time (I don’t!).

Homemade curly fries!

Wow! Since owning a spiralizer (it’s only been a week but how did I live without it?!) I’ve made courgette noodles, apple spirals, carrot noodles, and today was the potatoes turn.

Wow. Sooooo good.

So crispy and homemade tasting. NOM. I spiralized the potato, added paprika, salt and oil, and baked for around 10 mins at 200C.



King of Salads

I had a mis-match of salad and all sorts… And it was a huge winner so here goes…


SautΓ©ed veg (mushroom/pepper/onion), tomato/vegan mozzarella/basil (with balsamic vinegar) and a rocket and caper salad with lemon juice and olive oil.


The tomato slices with vegan mozzarella and basil were the highlight. This is a summer almost tradition in my house (with real mozzarella) so I am delighted to have found a vegan substitute! It doesn’t taste like the real deal but when covered in balsamic who’s going to care eh? Still very tasty.
