Elsa's Wholesome Life

Okay, so this really is the best thing since traditional caramel slice.. my raw and vegan ‘not-so-traditional’ Gooey Caramel Slice. This is for all you caramel slice lovers out there… Warning: it is sweet, delicious, and you will have dreams about this once its all gone. 😉

Now I must confess, all my life I have never been in the caramel slice fan club.. I always found it to be overwhelmingly sweet to the point of sickening. But as I’ve matured, my love for dark chocolate has grown, and now my love for caramel slice is forming, actually it just formed today when I tried this caramel slice 😉 .

Garlic bread (vegan)

Discovered that most frozen garlic bread is vegan. Subsequently have been through two boxes of the stuff.

Cue my guilt leading to me making my own bread from scratch and it was GLORIOUS. 4 ingredients (flour, yeast, salt, water) and topped with garlic butter (DF margarine, garlic and chives).

7 day Ayurvedic cleanse

I went on a diet. Me. The cake, carb, food loving me. Diets are usually a big no for me because I get super into them and then rebound by being super-not into them (and binge on loads of the good stuff).

This one was different! It wasn’t a diet, but a mind, body and spirit cleanse by Linda Bretherton, founder of PsychoVeda. I’ve mentioned her a few times on this blog, she’s great! My mind, body and spirit feel cleansed and rejuvenated, and I feel relaxed and ready to start the year!

I ate wholesome, tasty food three times a day. In fact I felt like I was always eating. The meal plan gave me the structure I needed after way too many takeaways and binge eating/drinking over Christmas. I also cut out alcohol and sugar which must have made a huge difference.

So basically, from this ramble I want to say… Firstly everyone go check out lindabretherton.com … And secondly … WHOLE FOODS … YUM!!!!!!! Thank god I am now back on the straight and narrow… And feeling good.

If you’d like any of the recipes, visit Linda’s website and get in touch with her. The programme involved daily processes for mind and spirit also… And I felt pampered every night! All from the comfort of my home.

For those of you wanting a recipe though… There’s a little cheeky one coming up next.

Leek and Mushroom Pie- New Vegan Recipe!

This is happening tonight if I can find any vegan pre-made pastry.. mmm

Vegan Convert

Hello subscribers/passers by!

So in the past I’ve been doing recipes for quite random things, but last night I thought I’d have a go at my first ever pie

I’ve never made a pie before, so was worried it would go completely wrong, but on the understanding that Leek and Mushroom flavours go excellently together, and knowing that a cream sauce consists of Flour, Butter and Milk, I set about blindly making this pie and I have to say it could have gone a lot worse!

The cream sauce was a perfect accompaniment to the leek and garlicy (we love garlic but you can put less in if you’re not such a big fan) mushroom filling, and although the pastry was rolled a little too thick, it still tasted delicious and went down a storm with my meat-eating, anti-vegan boyfriend! 😀 (He is even becoming converted to tofu now and…

Kimblake soup

Making this tonight to try and ‘heal’ my hayfever/blocked head… nothing a bit of positive energy can’t solve!

Vegan Convert

This is an Ayurvedic recipe, one which I was taught by Linda Bretherton. She is a friend of my mums, and runs workshops in the Ayurvedic lifestyle.

The soup is thought to have certain healing qualities, which is why it’s become a favourite for when feeling ill or weak. I made this soup for my Grandma in the summer when she’d been ill, and a few months ago my nan has the sniffles so I took her round a batch! It is honestly delicious. A very quick, simple soup of sweet potato, lentil and a few spices.

As it’s Easter, all of the siblings came home for a family get-together yesterday (Easter Sunday), so I made a massive batch of Kimblake, and also a batch of Carrot and Coriander soup by BBC Good Food.

They were both a hit, but I made LOADS of Kimblake so I have some…
